⭐️⭐️⭐️⭐️⭐️ CooperSmith’s Pub & Brewing is absolutely dialed in right now. The food is great, the cocktails are on point, and the beer is consistently amazing—but what really stands out is how much this place has leveled up. You can tell they’ve put serious effort into updates, cleanliness, and overall quality, and it shows in every detail. Add in live music and the new poolside opening, and it just takes the whole experience to another level. Whether you’re grabbing drinks, dinner, or just hanging out, CooperSmith’s delivers every time. Hands down, this is my favorite restaurant in downtown Fort Collins. 🍻
Have eaten dinner and lunch here several times. First the good. Location is great with nice outdoor space in the square. Inside space is dated but okay. Waitstaff is consistent and pleasant. Now the big problem. The beer is not up to par and the food is almost as lacking. This establishment has been around a long time (it’s the oldest craft brewery in town) but the beer is some of the dullest and uninspired I have tasted. The majority of the beer offerings lack flavor and complexity. Try Peculier in FC or Windsor if you want to compare to a high quality and sophisticated brewer. The food menu is not much either. Average at best pub faire so it’s not terrible. Just keep your expectations in check.
We really enjoyed the ambience - sophisticated but approachable and inviting. The music was nice but at a volume that we could enjoy our conversation. And the table placards advertising 2 for $25 burgers on Mondays has me wishing we would be in town a bit longer.
