I prepared Momofuku's Bossam for New Year’s lunch using this meat, and the results were phenomenal. It cooked perfectly, with the rich marbling rendering down to create a tender, flavorful, and juicy centerpiece. I received 2 steaks from this company that to me looked green and not good. I send a picture to the company that just laughed and me and saying that there was no problem with me meat. They even went on to send childish joke messages instead of giving me customer support.
